Healthy Banana Pudding

This recipe is so easy and is the perfect meal for a quick breakfast or even a dessert. Also, side note, after making homemade granola you’ll never want to buy store bought again!



  • 2 bananas
  • 1 cup plain Greek yogurt
  • 2 tablespoons honey or agave
  • 1/2 teaspoon vanilla extract


  • 2 1/2 cups rolled oats
  • 3/4 cups almonds
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1/2 cup maple syrup
  • 1/4 virgin coconut oil
  • 1 tablespoon vanilla extract


  • Banana slices
  • Berries
  • Chia seeds


For granola:

  • Preheat oven to 350 degrees
  • In a medium bowl, combine oats, almonds, salt and cinnamon
  • In another medium bowl, whisk together coconut oil, maple syrup, and vanilla
  • Pour the mixture over the oats until all coated evenly
  • Transfer to rimmed baking sheet and spread evenly
  • Bake for 45 minutes, stirring every 15 min
  • When done, stir and transfer to an air tight container
  • Will last for up to 2 weeks!

For the pudding:

  • In a food processor or blender, combine bananas and Greek yogurt
  • Add in honey until smooth (add more honey if need be depending on how sweet you like it)
  • Transfer to bowl and add some banana slices
  • Top with garnish of your pleasing and granola
